Hello Reader,
October has finally arrived friend!
We have also dipped down into the 80’s which is better than 100 degrees haha. I hope it’s starting to cool off for you where you live.
It’s also pumpkin time! I’m heading tomorrow to an antique market here locally and there’s a pumpkin farmer from Ohio that I’ve been going to since 2009. It’s the sweetest family and they grow the most beautiful pumpkins. That’s the downside of living here in Florida. I have pumpkin envy in states like Vermont or TN lol. But, I’m thankful Mrs. Julie and her family come down here every year. I’ll post what I get next week and on Instagram.
I’m not adding a bunch to my porch. I’ve got it decorated pretty simple with just a throw over one of the rocking chairs, some pillows, flowers and I’ll add the pumpkins tomorrow. I did just add a good variety of fresh herbs I potted. I love having them right outside the front door. Easy to add them to a quick meal.

My husband loves enchiladas every time we get Mexican at a restaurant so I decided to create a Cheesy Enchilada Soup. It is delicious! I have been on a soup kick for a while. This slow-cooker chicken tortilla soup is great to fix too when you have those crazy days. I just love how simple and easy they are to make but fill you up pretty good. Whatever you do, make a pan of my grandma’s old-fashioned southern cornbread. So good!

Old-Fashioned Southern Cornbread
This is my grandma’s recipe that I grew up on. It was a staple every week. I tweaked it a little bit to add a few healthy ingredients. I grind my own cornmeal which makes this extra nutritious.
Ok, so I’ve had my first proof of just the manuscript and editing. I have to admit that I have an appreciation for editors. It’s a lot of reading on their part straight from the computer. I can only imagine. It’s taking longer than I expected so I’ve decided not to worry about the time line for right now. There’s no sense in fretting or worrying about this. The editor said I should have my 2nd set of proofs to me shortly. After that, then there is formatting of the book. Since it has so many recipes, I guess it just takes a while. I’m also self-publishing so I’m working around her schedule.
I realized though, when you see someone online say their book will be available for purchase say next year in March and it’s October now, that means the publishing company is doing all the behind the scenes stuff to get the book ready to print. You’ll see pre-sales and then you have to wait for six months to receive the book. Mine won’t be like that. Once I publish and go for the launch, the cookbook will be ready to purchase that day.
I’m so excited and can’t wait to show you everything once it all comes together! I have two weddings to go to this year and it will make a great gift for a new bride. It will also make a great Christmas gift for a young college lady just starting on her own or maybe a busy mom that normally just blows through drive-thru’s on her way home. My style of cooking is simple. One of the reasons I started my blog back in 2014. I don’t have time for fussy meals. I want real nutritious food on the table in 30-60 minutes or slow-cooker meals if I have a super busy day.
