“Do what you can, with what you have.” ~ Wendy Walker
Hi Reader,
I’m so excited! I went out to the garden today and found our plum and peach trees with blossoms. We’ve had several freezes and I’ve been waiting to see if anything happened to them. I did check my avocado tree and I’m not sure. Still holding out for hope that it’s still alive 🥴.
Growing up my mom would make Strawberry Shortcake all the time in the Spring and Summer. She would use these little round cakes (I think they came in a pack of 6), mash up the strawberries and had cool whip. I thought that was everything as a kid haha.
Today, I’m sharing a moist Sour Cream Lemon Pound Cake with you. It’s heavenly. There’s something about the taste of the sweetness and tartness from the lemon, sour cream and strawberries. Coming from a chocolate girl, this pound cake is becoming one of my favorites.

That little broom in the photo above is actually a cake tester. All you do is pull one of the pieces and use it to test your cake or baked good. So cute.

This is becoming one of my favorite loafs. The combination of the lemon and sour cream is so delicious. It can be served in so many ways.
It’s still strawberry season here so I’ve been making Strawberry Shortcake on repeat. It’s so easy to do.
Once the pound cake is cooled, cut it into slices. Meanwhile, mash your strawberries, creating a juice. Adding sugar is optional. I like drizzling maple syrup while mashing them. Scoop the strawberry mixture on top of a slice of pound cake, then top it with homemade whipped cream. Add a little lemon zest and oh my, you have a yummy treat! Sharing with others is optional haha.
I’ll have a printable recipe for you soon but in the meantime, I hope you enjoy making this.
Learn how to prune and plant fruit trees in your yard. It’s not scary cutting parts of the tree off, I promise. Your trees will start producing more fruit.

Grains - These two companies are my favorite for buying grains and freshly milled flour. The flour is ground on a Unifine mill, which retains all the nutrition due to the process of using stones. No glyphosate, non-gmo, organic clean wheat. If you are just diving in, this is a great place to start.
